Growing and eating organic carrots is one of my favorite things about farming. In the field they are a true test to patience, faith, discipline, and skill. In the spring, they might take up to three weeks to germinate, then you have to protect the tiny delicate seedlings from weeds and pests, and you can’t let up on their maintenance or else they really will get swallowed by either weeds or pests. As their tops fill out and their roots grow, it is a matter of observation and patience so that you don’t harvest them too soon and too small. When the day finally comes to pull them from the ground, rinse them clean, and eat them, it is a true celebration every year!
